I never had asparagus until a few years ago, but it is some good stuff. Here is a quick recipe that takes no time to cook.
Ingredients:
- Asparagus
- 1 Fresh Lemon
Trim up your asparagus.
Take a deep pan and put about 1/2 to 1 inch water in it.
Bring the water to a boil on the stove
Put asparagus in and cook for about 2 minutes
Drain the asparagus (You could put it in a bowl with ice to stop the cooking if you wanted to finish it a bit later)
Put asparagus back in pan on medium heat
Add one half of the fresh lemon juice
Cook for another 2 or 3 minutes
Remove from pan and put in a bowl
Add rest of fresh lemon juice and toss the asparagus
You could step it up a notch by adding a sprinkle of low fat parmesan cheese.
